If you're watching carbs, this is the ideal way to make some super nachos!
Chop red, yellow and orange bell peppers into bite-size "scoops". Season with your favorite southwest-or-Cajun-type seasoning, then add meat - pork, beef, or chicken, whatever you like.
Cover it with a TON of cheese (I use Monterrey Jack).
Pop into a 400 oven for about 20 minutes, till cheese is good and melty.
Serve with chopped green onions and sour cream!
